Sitting at a pub in the beautiful beach town of Lorne, I pondered what I would chomp on after a good day swimming in the surf. There were a couple of pub food staples that struck my fancy – fish and chips, kangaroo steak and something called Chicken Parma. Sounded intriguing – I asked Jackie’s cousin Toby for a little more information on the dish. Turns out the meal is a Aussie staple if you are in the following situations:
1. Hungover
2. Ready for a night on the town (preparing to be hungover)
After checking the ingredients I could see why:
- 1 breaded chicken breast fried to perfection
- Tomato sauce layered on top of the chicken
- a perfect sized slice of honey glazed ham on top of the sauce
- a massive slab of delicious mozzarella cheese slapped and melted on top of the ham
- All served piled on a plate or fries and a garden salad (gotta make it healthy somehow)
Now this isn’t the option to pick if you are “weight watching” or “biggest losering” but since I was doing neither I decided to rock it, plus it has salad so it is a balanced meal…
What a great choice it was, the closest thing I can compare it to is a massive, tomatoish Cordon Bleu. It goes great with a frosty pint, which Jackie, Toby and myself had already indulged in and you can really feel it give the ol’ stomach a good lining.
Apparently there are some adventurous restauranteurs who have taken the parmi and forced it through a culinary evolution, replacing the tomato sauce with pineapple sauce, pineapples etc. so there are many variants if the above recipe doesn’t strike your fancy.
When I get home and am planning for a night out like my last birthday (R.I.P Brian*) I will have two breaded chicken breasts ready to roll: one for the night before and one for the first thing when I wake up.
*Brian is the nickname of the keg my pals and I drank the night of my 25th last year, needless to say we all had a love-hate relationship with the little fellow.

Surprisingly, Brain knew it all – a common trait in people and things that have the similar name.
He told my brother and I to “drink me for goodtimes” and although he as right – he forgot to mention the ill after affects of such an evening filled with debauchery.
